What actually matters in an electric kettle (the framework)
- Variable temperature vs boil-only. Green/white/oolong tea and pour-over coffee want specific temps (≈160–205°F). If you only make black tea, instant coffee or oatmeal, boil-only is genuinely fine — and cheaper.
- Gooseneck vs standard spout. A gooseneck gives the slow, precise stream pour-over coffee needs. A standard wide spout pours faster and suits tea and everyday use. Buy the spout for what you actually brew.
- Capacity. Goosenecks run small (0.6–1 L, a couple of cups); standard kettles hit 1.7 L for households. Don’t buy 1.7 L if you make one pour-over at a time.
- Keep-warm / hold. Holds your chosen temp (≈20–60 min) so the second cup doesn’t need a re-boil.
- Material & build. Stainless vs glass; look at what touches the water. Nice-to-haves: lift-off memory (take the kettle off the base without cancelling), 360° cordless base.
